Ingredient spotlight: Pomegranate

Pomegranates are the fruit of fertility, used for thousands of years for various health problems.

The fruit itself is wonderfully unique, with about 600 red “arils” inside each one. These are the individual juice sacks, each one with its own small seed. These seeds, when pressed, generate a tiny amount of nutrient-rich oil – in fact it takes about 200 pounds of fresh pomegranates to yield one pound of pomegranate seed oil, according to a distributor of the oil.
